Yes. The SIM card has no bearing on video, or audio or any type of recording. If the iPhone is set up and you can access apps, you can do whatever you want on it, except for making calls and sending SMS messages.

Nope. And even if it did, it would have nothing to do with the lack of SIM card.

The SIM card just has your phone service settings and number. Nothing else.

Is the iPhone activated? If so, you should be able to record.
