It would be the time and date that the screenshot was taken.
“Tuesday 21:49” would be the time of the screenshot. There is no additional time/date added to a photo when it is deleted.

Any screenshot I checked on my device showed the correct time/date of capture. Unfortunately, I have no way of proving or disproving 100% of cases.
Thanks again. So the 3:28 is the time I took the picture, the 23:19 on the lower left is the time on the phone when it was screenshot, and the date and time together are also when it was screenshot? Sorry for all the questions
