For flatbed scanning of single documents, but not slides, nor film strips, nor Automatic Document Feed (ADF) requirements, I use the Canon LiDE 400 scanner that is under $100. It is a USB-A attached scanner that is Apple AirPrint compatible. It has worked with all versions of macOS through macOS Tahoe 26.5.1.
That means I purposely did not install any Canon drivers or their software from the included DVD, and the scanner works well with Apple's Image Capture, or the optional VueScan Professional scanning software.

After3 LDE scanners over several years, I got tired of messing with them. I liked them until they needed drivers or just stopped working.I bought an Epson Perfection V39 and it works great. It's just a flat bed scanner-- not slides, etc.I run it using the Image Capture rather than Epson's software.
Yours is a very broad question. What are you scanning? Books? Printed sheets? What size? Color? Quantity? Speed? Resolution? Etc. A dozen more questions before anyone could begin to recommend anything.
Whatever you decide upon confirm that it is AirPrint-capable.

The Canon LiDE 200 is not listed as an AirPrint device, but is supported without vendor drivers in VueScan Professional. For 26.5.1, I would reinstall the LiDE 200 ICA driver and see if that allows it to work again. Or just replace it with the LiDE 400 and march on…

BTW I have can Canon LiDe 200 which is no longer supported in macOS 26 Tahoe. Surprisingly it initially worked in MacBook Pro M5 in macOS 26.5 (ICA Driver Ver.5.0.0 (Mac) 09.12.24) but after 26.5.1 update it doesn't seem to work anymore.
I might continue to use it with VueScan or dedicate my old Mac mini 2018 Sequoia to scanning (and also printing to Samsung ML-1675 and HP LaserJet P1005 via Pacifist.app installer workarounds...).
Or maybe macOS 27 Golden Gate with its USB updates can then use virtual machines via UTM etc via older Sequoia to scan with LiDe 200??
