Anyone notice if you copy a phone number from your contacts and paste in an email and both number and email background are the same color, you have to change number color…weird, can somebody please fix this?

Nope. Can't reproduce this. If I copy a phone number (or any details from Contacts) and paste into an email message, it appears as black text on a white background, as I'd expect.
That said, there may be something specific about your setup that differs from mine, so maybe more details would help. Either way...

If it is a bug then a fix will have to come from Apple. No one here can 'fix' the app if it's broken.. at best all we can do is help identify the cause and offer a potential workaround.
Yes I am having the same issue, if I copy the phone number from the contacts and paste it into an email, I can’t see it as they are white numbers on white background.
same issue here.
copy the phone number paste into other app text is clear on clear background (so invisible)
Pasted contact number color matches email background
