Apple support's YouTube video (link below) explains how we can use & (at 3.22 how we can) customise Assistive Touch.

Customising your use may or may not provide a solution for the issue.

You likely know that you can turn Assistive Touch on or off by using Siri. If needed: you may be able to leave Assistive Touch for some tasks, and return to Assistive Touch when finished.
