If I remember correctly, the view in the Finder window (column view) would always jump to the last selected item when searching or selecting in another program. Is there a way to set this up in Tahoe as well?

This has been reported previously by others, and it's either a bug in Tahoe or a change in the intended behavior. Either way, the only way to have it changed back to the previous behavior is for Apple to do so. To have Apple consider your feedback, submit it here:
As you point out, this happens in Column view. A workaround in the open/save dialog boxes is to use List view, since that defaults to the last used location.
