Sidecar and mirroring use the same protocols. You can't connect to two different devices using the same protocols at the same time.

Apple is not here to answer your “Why” questions.
If this limitation does exist, an educated guess would be that there is some conflict or overlap in the way that the two features are implemented that could cause trouble if both were active at the same time.
