Re: "Accessibility keyboard glitch: " ... I can't get it to stay anchored in one place. I use hot corners, and anchor the keyboard, but as soon as I start typing it jumps to the middle of the screen."
Am no expert in this area, yet your questions deserve some response, and others may seize the opportunity to contribute their expertise.
Wondering whether or not setting the keyboard to move to the dwell corner when you turn that on would be helpful.
(Note: You can also turn that setting option off when you want:)
Change Keyboard settings for accessibility on Mac - Apple Support
Eg: says:
For Apple menu > System Settings, click Accessibility in the sidebar, then click Keyboard.
Option:
"Panel follows hide/show home panel
When you use a dwell corner to show or hide the Accessibility Keyboard or a custom panel, have the keyboard or panel move to the dwell corner.
If you don’t want the keyboard or panel to move to the dwell corner, turn this option off."

Re: : ... when I minimize, there's still a little keyboard box in the middle of my screen, which blocks reading, scrolling, etc."
Wondering (if you haven't already seen it) whether the tips in Apple Support's online article (link below) may be helpful to you:
Eg: linked article says:
"If you set the option to fade or hide the Accessibility Keyboard after a period of inactivity, you can make the keyboard fully visible again by moving the pointer over the faded keyboard or, if it’s hidden, moving the pointer".
You can see many "how to" tips in the linked article:
Use the Accessibility Keyboard on Mac - Apple Support
Eg: one tip says:
"Change Accessibility Keyboard options
While you’re using the Accessibility Keyboard on your Mac, do any of the following to change options for it:
In the top-right corner of the Accessibility Keyboard, click" (''') three dots for more), "then choose options (a tick indicates that an option is on). For example, you can change the appearance of the keyboard to use dark text on a light background, fade the keyboard after a period of inactivity, or turn Dwell on or off.
Use the Panel Editor on your Mac to customise the Accessibility Keyboard for use with your favourite apps."

Re: "So annoying! Is anyone else experiencing this issue/
found a solution or fix?"
As Apple users, just as you are, we don't get to see what feedback is sent to Apple, so we can't say.for sure.
The experts in this area are often those, like yourself, who rely on the frequent use of the accessibility keyboard. You may or may not get more responses here.
If you wish: You can contact Apple's helpful Accessibility Support Team:
See: How to contact Apple for help with accessibility features - Apple Support
Also, if needed: Most Apple software and hardware products include unlimited complimentary support incidents within the first 90 days of product ownership, or longer if required by applicable law.
All the best :-)
