The HP OfficeJet Pro 8600 is an AirPrint printer so no drivers are needed for its Print and Scan options. With the printer on the same WiFi network as your Mac, go to Image Capture in your Applications folder, and you should see the printer/scanner in the sidebar where you can initiate a scan.
You may have to give permission for Local Network access, so go to > System Settings > Privacy & Security > Local Network and if you see an HP Scanner option there, make sure it is turned on.
