I purchased an iPhone online today for in store pick up, I’ve opened the box but have retained all packaging etc… Can I exchange it for a different colour even though I’ve opened it and used it?
I am still within my 14 days. The condition remains the same as when purchased. I am in the UK.

I have not see where they do a straight across exchange. You would have to return the device for a full refund, then purchase the one that you want. That is so your Purchase History is correctly reported and your Apple Care coverage will be showing on the new device instead of your old one, along with that purchase receipt showing the correct serial number of the device.

That’s correct, Apple Retail will credit the original payment method. If a credit card it may take 5 to 7 business days for the refund to be credited and appear on the cards available balance. The store may be able to return to an Apple Gift Card or Apple Account. This avoids the delay of having funds available. I’m just not sure of current SOP for in store refunds and the limits of the management team. Can’t hurt to ask for a manager and see what they can accomplish. Online returns are much stricter and generally can’t be over ridden by supervisors etc.
Please read the solutions already presented in the replies in this thread. Apple permits a 14 day return period. If you purchased the device from another merchant, you’ll need to review the merchant’s return policy.
If you bought it through Apple, yes. Otherwise, check the store's policies.

I would try to reach out to the place you purchase it
in the usa they have a 14 day return full refund, not 100% sure if eu / uk have the same
well I know that in eu we do at least if it's online

You have 14-days to return it.
Another option is to simply buy a protective case of your favorite color and it is much more affordable.
You can change the color every day if you buy enough colors.
