Yeah, you definitely need to pay attention to the computer while using the Asahi installer and follow their instructions exactly. There are a couple of steps that even require manual intervention.
I have been trying to restore it using a laptop I installed Linux Mint on (Lenovo Yoga 530-14ikb) with idevicerestore. Whenever I try to flash it, I get an error "Device did not disconnect. Possibly invalid iBEC. Reset device and try again.". Is this because the M2 switches modes when it recieves an update, and is to accurate to be captured by other PCs?
No idea, although I did see a post on the Apple Discussion forums not too long ago where a user did claim success at using Linux to flash the system using one of Apple's .ips files. That was the first & only time I've seen it mentioned until your post here.
FYI, even when using another host Mac, it can be very difficult to achieve success. I've performed the process using macOS multiple times & I still encounter issues while following Apple's instructions. The critical parts are making sure you are using a USB only cable......Thunderbolt cables will not work. And to make sure the USB cable is connected to the dedicated DFU port on the broken Mac. Also I make sure the host Mac does not fall asleep or lock the screen/logout during the process just to be safe (especially when the host Mac is an Apple Silicon laptop where permission to access the ports are required).
Plus without another Mac using Apple Configurator v2.19, you have no way to really confirm the device is actually in DFU Mode or some other unknown mode/status. At least with Apple Configurator you have a little bit of feedback to know when it is powered on & whether it has actually made it into DFU Mode.
