1) Make sure the printer is connected to your local Wi-Fi Network using the Epson's on-screen menu.
2) Make sure that the Printers Firmware is up-to-date using the Epson's on-screen menu.
3) Then on the Mac, Reset the Printing System and Add the Epson Printer to the list.

Epson is… not my preference. Anyway. This printer does reportedly support IPP, which means the built-in CUPS printer driver should work.
Launch Terminal.app from Applications > Utilities
Enter the following command, and press return:
cupsctl WebInterface=yes
Close Terminal, and launch Safari. Enter the following into the browser address bar:
http://localhost:631/printers
You should now be in the CUPS configuration tool, and can add the printer by its IP address.

That same printer IP address also allows access to the embedded web server within the printer, and that interface provides for remote management of the printer. Enter that printer IP address into the Safari address bar, and you’ll be using the printer’s own embedded web interface. The printer firmware update tools are probably available there, too. See page 170, and related.
Using IPP means no printer vendor drivers are necessary for performing the common printing tasks.
If that all works, we can then take a few steps to make this work more reliably longer-term; either with a DHCP reservation, or with a manually-set IP address. (But first we get this printing.)
FWIW, My ET-2600 would not print from my MAC. The ET software could see it and I could print a test page from the utilities menu. However, when it came to print a document, although the MAC could see my printer (allegedly) , it couldn't FIND my printer. Epson have updated the drivers and I saw there was a new printer driver with TC/IP as an extension. That works fine. SO, make sure you have ALL the latest software installed, remove the printer from Settings->Printers and Scanners and add it again and see if there is this new driver.
Also, the Epson ET-2860 does not appear to be listed as an AirPrint-enabled model (https://mfi.apple.com/account/airprint-search).
