My son is part of my Apple Family. I am the family organizer and set as his parent/guardian.
I accidentally removed myself from his iPad location sharing, and have not been able to add myself back. I've requested access, hit "share" in his "Find My..." and nothing will add me back. Help please?
Need to be able to find this thing in case he hides it or we accidentally leave it behind. Thank you.
Your son will need to reapprove your Find My request. Even though you guys are family members, it will not auto approve.
Also, go to Settings > Screen Time > [your child's name] > Content and Privacy Restrictions > Location Services > Don't Allow Changes. Ensure on that same page all other pertinent settings are working, such as Location Services and Share My Location.

Try this. On your son's iPad, open Settings > [tap his name] > Family > Location Sharing, try toggling it off and back on.
