I want to know if I can “network” my 2 Mac mini’s and my MacBook to have a “shared” desktop and combined data without hardwiring?

Yes you can use Screen and File Sharing over your local Network.

If both Macs are signed in to the same Apple Account, you could turn on the feature to store the Desktop and Documents folders in iCloud.

(Don’t put Photos libraries in folders synchronized via iCloud. Use iCloud Photos instead.)
