On iOS 26.5, a child account under Family Screen Time can repeatedly tap “One More Minute” after an app/website limit is reached. The child does not need parent approval, and the action temporarily unlocks all apps, not just the app or website that requested the minute. This can be repeated indefinitely, making Downtime/App Limits ineffective. This is a parental-control bypass affecting child safety settings.

Tried that. To test how far I could take this I enabled screen time downtime and then set app limits to 0hr 0min for all app and app categories. The above minute request in safari still allowed all apps and could be repeated over and over again. This is on iOS 26.5, iPhone 13 Pro.

Of course, since you know your kid is defying your wishes, you have the right to take the phone away if your kid isn't obeying your explicit directions.
I just discovered this issue on my kids' phones also. I confirm that my kids' phones and my phone are all on iOS 26.5.2. The issue is still not resolved.
One more minute parental control bypass.
