The current version of Illustrator supports Ventura, Sonoma, Sequoia, and Tahoe. (Since Ventura is no longer one of the "most recent three", I wouldn't count on Ventura support being long for this world.)

But you're asking about Illustrator 2019. It looks like Adobe introduced it on October 15, 2018 – when macOS 10.14 (Mojave) was the latest and greatest version of macOS. Even assuming that Illustrator 2019 did not include any 32-bit code, there are many ways in which the application could have broken between Mojave and Tahoe.

I'm sure that at some point, Adobe drew a line and said, "we're not going to bother issuing any patches to Illustrator 2019 to make it compatible with newer versions of macOS." The way you are expected to get Illustrator to work on newer versions of macOS is to install a newer version of Illustrator.

I could be mistaken, but I believe that Illustrator 2019 may have been a "subscription" (rental) only application. So if you have an active "subscription", the right to download and use the current version might already be included as a part of the plan you are paying for.

That's not today. That's AFTER MacOS version 27.

Rosetta will not be included in MacOS 28 -- at this writing, over a year away.

CS6 was the last non-subscription suite Adobe released. That was in 2012. Everything after that is the subscription-only Creative Cloud suite. So it's impossible for any 2019 app to be anything but a CC subscription.

And why would you want the 2019 version anyway? The tag in your initial post shows you're using a Mac mini running macOS Tahoe. Just use your CC subscription to install the latest release of Illustrator.

I suppose that's a question for Adobe, but why did it stop working for you? Incompatibility with your Mac, or its macOS version, or...?

Adobe says Illustrator "now runs natively on Apple computers with the Apple silicon chip" but you would need to Contact a third party vendor - Apple Support to determine the correct version.
