I’m trying to do an update on my Apple Watch also and it’s going to take over two days. It has to do an update connected to Wi-Fi. The Wi-Fi in my building is very very bad. I always use my hotspot for Internet in my room. I have unlimited data and 5G with a great download speed
Why can’t I just use my hotspot?

Well, you have your answer.
However, my recommendation is to allow the update downloaded to continue running. It will take a while, but is quite likely to be much less than the initial time estimate.

Yes, it is stating that. Leave in update mode, the time estimate will change. It is HIGHLY unlikely it will take more than a couple of hours.
