I am not quite sure specifically what settings you would like to adjust, but there are two ways you can adjust these settings.

1. Go to Settings > Sounds and Haptics
2. Go to settings > Accessibility > Audio and Visual

If you can provide specifically what you would like to adjust, I can do some more research to try to help you.

What exactly are you wanting to adjust? Apple offers limited audio adjustments for users. Most adjustments are provided by third party apps. External microphone, and other external hardware generally have their own accompanying app.
