My screen recording quality from quicktime on Macbook Air M1 is noticeably lower quality and pixellated compared to Macbook M1 Pro 16" 2021, can anyone please explain to me why this is? Also, there used to be a quality change setting between Low and High on the M1 Pro 16", but on my M1 Air Quicktime, there is no such option.

No clue where you saw quality settings for a screen recording. There's a setting for HDR vs SDR (which should match your monitor's native color space), but that's not a hi/low quality settings.
How are you playing these back? In QTPlayer? Be sure they're sized no larger than their native resolution when playing back.
Can you share one video of each for us to take a look at?
I think understand the reason why behind the low-resolution recording with quicktime.
I have been using Resolutionator App to access / force simulate the higher resolutions on my Macbook M1 air as the default natives are simply too large to work with when working with design apps.
Go to the System Settings >> Display and re-select the same resolution (in the above case / example 1680x1050). This then briefly refreshes the mac, and immediately - all my screen recordings are recording at their 1 to 1 quality.
