Hello baz-kaz, welcome to the Apple Support Community!

When you add a caption on your iPhone, macOS and iOS save it directly to the image's metadata (in the Description or Exif field). If you transfer the photo via a simple copy and paste to USB, Windows 11 does not always read this data correctly. To keep and see your captions on your PC, the easiest solution is to use iCloud for Windows. By enabling Photos synchronization, your .jpg files will automatically download to your PC, including all their metadata. Once on your computer, right-click on the photo, go to Properties > Details tab, and you will see your caption appear in the Description or Title line. Have a nice day :)
