when I attempt to order at the above site and choose Apple Pay the button that appears redirects to another payment provider. Hope this will get the attention of someone at apple. It’s somewhat misleading, I raised this with them over a month ago and it’s still the same.

You’re taping the Link button. What happens if you press the Apple Pay button?
The Link service does seem to be requiring your email address. Have you discussed your displeasure and concern with the merchant? Have you tried to use the merchant’s app rather than website?
So, what is your concern? Payment processors are becoming quite common. Third party payment processors may offer additional layers of security and privacy for all the merchant’s customers. Third party payment processors also reduce the merchant’s cost of developing and maintaining their own checkout flow.
What sign up are you referring to? When I went through the process there was a link for guest checkout. If I didn’t click link I could register for an account with the merchant. Merchants often offer benefits to account holders/ club members such as free products, discounts and other benefits. But the option for guest checkout is present.
The concern is that the process is misleading. I expect when selecting Apple Pay that I don’t have to sign up for a third party payment provider. Seems to defeat the purpose of using Apple Pay.
