Why is my apple watch recording my wrist temperature but not displaying the temperatures in the health app? I see the data being recorded.

The Apple Watch does not display absolute core body temperature (like a traditional thermometer). Instead it shows deviations (e.g., +0.5F or -0.2F) from your personal norm. To establish that norm, you must wear your watch to bed with Sleep Focus turned on for at least 5 nights.
If it has already been more than 5 nights and still isn’t populating that graph, ensure that these settings are enabled.
Wrist Detection must be turned on (Watch app on iPhone > My Watch > Passcode > Wrist Detection).
Sleep Tracking must be actively tracking sleep (Health app on iPhone > Browse > Sleep > Full Schedule & Options > Use Apple Watch for Sleep).
Sleep Focus must be on at night when you wear the watch to bed
