How do you determine a default debit card on a Mac for Apple Pay when you head more than one card entered. All guidance (so far) says to use Settings/Wallet & Apple Pay/ 'drop down default card' list. I don't have that drop down list in Wallet & Apple Pay.

Autofill is a feature of Safari and is not Apple Pay. The same card can be in Safari Autofill and in Apple Wallet app (or appear in Wallet & Apple Pay in Settings) but are separate and treated separately in regard to payments.
While a default payment method can be set for Apple Wallet, no separate default method is available for Autofill. The default for Apple Wallet, becomes the default for Autofill as well.
You’ve currently have several options. Set the default for Apple Wallet as the card you want Safari Autofill to use or remove all Autofill cards except the one you want to use.
If you have old and expired cards in Autofill you can remove or edit the cards by following the path,
Mac > Safari > Settings (Preferences) > Autofill > disable or edit cards
Set a default card at the following path,
Mac > System Settings > Wallet & Apple Pay > Defaults > set preferred payment method
Its important to point out the Autofill does not offer the same security and privacy that using Apple Pay checkout does. Autofill does not hide personal and financial information from the merchant.

I think I have resolved it! Having deleted all my cards and added them back in again it said I couldn't use them for Apple Pay as auto log in was on (it was turned off but greyed out). When I looked up auto log in it couldn't be changed due to FileVault. Change that and I can now choose my default card.

The fol is for iOS but the Mac is similar.
The “default” ApplePay payment card is the card “in front” (the only card which you can see the front in it’s entirely) at the “lower end” of the stack.
You can “hold and drag” any payment card into the default spot.
Thank you but I don't have a 'stack' like you typically see in iOS, all I have is the list of cards under 'autofill' and it alway chooses the middle one! All fault finding so far has been to make that drop down stack appear under 'Wallet & Apple Pay, but none of the 'resolutions' have worked so far. I must be missing a set up instruction somewhere!?

I have set the default in Apple wallet but that is not reflected when I pay on a Mac using Apple Pay, it defaults to the middle of the three cards I have there and not the default one I set.
When I select
Mac > System Settings > Wallet & Apple Pay >
There is no Defaults section to choose from, that's my issue. Searching on line there are a number of ways to restore it but none of them have worked.

What specific make model and Mac OS are you using? Your iPhone and Mac are not synced in regard to default payment methods. Defaults are device specific.
