I’m using pages version 14.5 (7045.0.17) on a Apple M2 sonoma 14.7.6 (23H626). I understand that there is a newer version of pages. How do I update and how do I create master folders of pages documents with subfolders?

You update by downloading the new version from the App Store.
However, the new version of Pages requires macOS 15 Sequoia so you won't be able to update while on Sonoma.
Update to Sequoia or Tahoe first and you can then download the new version of Pages from the App Store.

To create Folders you can so in Finder, by right clicking on an empty area and selecting New Folder from the context menu.

In fact Ai answered my question with far more details and explanations then you’ve provided. I thank you, however for your attempt. My experience is that inthe current state of play, these computer giants who refuse to play nice in the sandbox, none of them possess the ability to make simple operations intuitive for the average housewife at the stove. ALL and I mean ALL are too busy trying to make themselves indispensable and worthy of a paycheck when in fact they are all going to be pounding the pavement, glad to get a job as a check. Your average reply was exactly what was stated in the expectations before I entered the community. This was more playtime for me than anything else, to see where CRM has lowered itself for a fat company that won’t offer it themselves. They know Ai will take the reins. If they were smart like most of the other fortune 500 companies that have adapted they would add that service. They are slow but I’ll bet anything they acquiesce.
Though Word works in a similar manner they have made the operation simpler because they bothered to offer that operation in drop down menus with the manipulation of files hidden so that it becomes mindless.
