Try Settings > General > Transfer or Reset iPhone > Reset > Reset All Settings.

You can also open Settings > Accessibility > Display & Text Size - make sure None of the switches are on for things like Differentiate Without Color or Smart Invert, Classic Invert.
Absolutely do NOT nuke the phone with a Reset as the first solution. That's a last resort move.
Settings > Accessibility > Color Filters
You will likely find the Color Filters slider on. The default is the top choice of Grayscale. Turn the slider off.

It’s a way to check and clear all Accessibility settings.

Doesn't matter. The sledgehammer solution should not be the first suggestion.
I've made lots of changes from the defaults on my iPhone, and I would not want to have to try and remember where all of those are instead of changing/checking what's the most likely possibility first.
