Apple inform me by mail that the Time Machine is not going to work any more with the new MacOS, there is another way that I can stell use my airport extreme ??
Because of that I don't update the MacOS.

AFP, the file protocol that the Airport Time Capsules use, isn't supported from Tahoe onwards so you won't be able to use the disc for anything if you upgrade to Tahoe. They're still good for home routers, although some might say that the security is a bit old and they support network extension with other Airports better than any other system I've used. I still use mine as my main wireless access point and I have the standard Airports (no disc) scattered about the house as Airplay devices for HiFi and anywhere I need an ethernet point.
When I first found out that the disc function was to be made obsolete I bought a Rasperry Pi and a USB disc and set that up as wireless-accessible storage for Time Machine. It was pretty easy but, like you, I won't be updating to Tahoe (different reasons from you) so I'm still using a couple of Time Capsules as part of my backup system.

Time Machine works fine, and continues to be supported.

The most recent AirPort Time Capsule hardware was sold from 2013 to 2018. Apple started exiting Wi-Fi gear in 2016.
I’m unaware of AirPort Extreme support being removed, and AirPort Extreme is (was) not supported with Time Capsule.
AirPort Time Capsule support was removed because AirPort Time Capsule supports only AFP and SMBv1, and support for AFP is gone, and SMBv1 is wildly (wildly!) insecure and being actively targeted for exploits. TIme Machine has supported remote SMBv3 backups as part of Time Machine server support, available since ~2018.
Beyond Time Capsule software support ending, nearly all AirPort Wi-Fi hardware support is gone, or long gone. There’s one AirPort box still listed as vintage IIRC, and the rest of the AirPort Wi-Fi boxes are all obsolete.
Pragmatically, all of the AirPort Wi-Fi hardware boxes are long obsolete.
Time Machine don't work any more.
