Reorganize local files and restart new iCloud backup

I'm a longtime Mac user but still have trouble fully understanding the way iCloud works - particularly Desktop and Documents. I want to work with all my files locally, and have iCloud as a backup or for non local archiving and sharing. Right now I've got a mess with some files only on iCloud and some downloaded locally and the folders don't match. How can I be sure I have everything on my local drive. so I can reorganize it, then how do I restart iCloud from scratch?

iCloud isn't a backup. If you think of iCloud as your backup, you are living dangerously.


iCloud Drive is just copied to iCloud.com. Whatever you do on the Mac is copied to iCloud.com.


If you have Optimize storage turned on, then the Mac may remove some files from your local storage. If you don't want that, then don't use Optimize Storage.

I swear, I intend to include this image of the right-click menu for files in iCloud Drive:

So even with Optimize, you can select files to "Keep Downloaded"
