Apple Watch 11 automatically pauses workout and sleeps
Apple watch 11 goes to sleep and pauses my workout automatically DURING my workout. It's new and I have to figure a few new querks.

Did you check the settings for Auto-Pause in the Watch App -> Workout -> Auto-Pause on your iPhone?
I did switch off Auto-Pause on my watch, only the Reminders for Resume Workout and End Workout are enabled.
Also make sure that the workout session is always active on the display until you end the session.
In the Watch App check -> General -> Return to Clock -> Apps -> Workout -> When in Session -> Return to App -> ON
Any tattoos beneath the sensor? If yes, this might also effect the recording of a workout.
