I spent a lot of time adding sites to my blocked list…..and now I have to delete sites to make room for more blocked sites. Makes no sense whatsoever!

Block sites? Perhaps you refer to the iPadOS Blocked Senders list - used to block unwanted Messages or callers? Something else?
What, specifically, are you attempting to achieve - and how? With a full understanding of what you are attempting to achieve, contributors here may be able to offer constructive advice and appropriate guidance.
Why are you blocking them? If you're blocking spam email addresses then it's a waste of time. The spammers discard addresses once the commercial spam filters start blocking them and just create new ones. Blocking addresses at a personal level won't reduce the amount of spam you get.
