I want to install my version of Final Cut Studio 5.1 to access a video files for a video cut in 2014. I am working on the same computer with OS10.14.6 but I also have a copy of my original OS X installation software. Do I need to re-install older OS X system and remove current OS version? What version of OS X was current in 2014 if it is required?

Final Cut Studio will not work in 10.14 Mojave.
If I remember correctly, the last OS version where any form of legacy FCP worked was macOS Sierra (10.12). And that was Final Cut 7, not sure if older versions worked as well.
You wrote video files. Did actually mean that (e.g. mov or mp4 files) or did you mean the editing projects done in Final Cut Pro. Video files themselves may possibly be open directly (depending on the codec used - eg H264 or ProRes files can be used directly on current macs) or open in Mojave and converted to a more current format.
Your best bet would be Luis' suggestion to try and retrieve the original video files from the project.
Re-editing is much quicker than the original edit as you already have a good idea of what to do.
Once you have the XML file, there's plenty of ways to get that into FCP 12 or DaVinci Resolve.
