I have two of my books that are available through multiple platforms that Apple have converted to audiobooks. Do I still hold the rights to those audiobooks and if so can I place them on other platforms too?

Apple don't convert books to audiobooks. As far as I know Apple get their audiobooks from Audible.
Normally the same people you used to convert something for sale by Apple would be responsible for converting for sale by other platforms. So contact them about it. Or find a different partner.
Ah yes, now that I come to think of it I believe Draft2Digital might have done the conversion. However, the audiobook is only available on iTunes and I would like to have it on Amazon and the other outlets that show my ebook and paperback. That would mean it would have to be in another format, such as mp3 but I have no idea if it can be converted etc?
