In Apple Mail, how do I get rid of this little dropdown arrow next to the email address? It's annoying because the dropdown contains all the folders within (sent, junk, etc.) which are also i the column below. So if I get a "junk" email , it show that I have something in my inbox for this account. The other inbox accounts down't have this little arrow.

You seem to have your own domain name (***). Looking at your screenshots, there is only one email address that misbehaves: ***. The other email accounts look exactly as they should.
First try to go the webmail site using a web browser to see if the Inbox folder structure matches the one you see in the Mail app. If not, remove the *** email account (in System Settings > Internet Accounts) and add it again.
If the folder structure is identical, please contact the email provider as there is something unusual with that account.

That is unexpected: the All Inboxes mailbox/folder should only contain the Inbox mailbox of each of your email account, nothing more, e.g. if you have 4 email accounts, you should only see 4 mailboxes/subfolders in All Favorites and those mailboxes have no descendants.
Right-click "All Inboxes" and choose Remove from Favorites. Then move the cursor over Favorites, click the "+" icon and add All Inboxes again.
Good idea! unfortunately, two things happened: 1. For that trouble inbox , the only option was the whole inbox ... So the same thing happened. (see attached). and 2. When I chose the other inboxes, they are now labelled " Inbox - ***

Thanks again! ... uh... not sure what happened, but it's fixed itself! Maybe going to Webmail? Not sure. I just noticed this morning that the little arrow is gone, and now it's just like the others.
Glad you got it sorted. It's entirely possible that visiting the webmail site reset the folder hierarchy and that it then propagated back to your Mac.
