I’d first check whether captions are still enabled after the update. Go to Settings > Accessibility > Subtitles & Captioning and make sure Closed Captions + SDH is turned on. Apple notes that captions also have to be available in the video or app you’re using.  Display subtitles and captions on iPad - Apple support (MM)


If this only happens in one app, try turning captions on from that app’s playback controls as well.


If captions are missing everywhere, restart the iPad and test again. If you can say which app you’re using, that would help narrow it down.
