I have Iphone 11, I'd like to upgrade to 26.0
DO NOT want to upgrade to 26.6.1
if I go ahead to upgrade, it will update to 26.6.1
How can i turn around to update ONLY 26.0 OR 26.0.1/

Sorry, Apple only signs the latest version of iOS, which is iOS 26.6.1 today. Apple stops signing older versions of iOS when a new version has been released after a week or so. This means that older versions can no longer be installed. There is no way around it.

You cannot update to iOS 26.0 or iOS 26.0.1.
Apple has removed the signatures for them, and they are no longer available.
Unfortunately, your question assumes that you can do what you want.
When you update, it will always be to the most up to date version. You are not able to pick and choose among previous updates.
I believe there is no way to install iOS 26.0 on your iPhone when upgrading from iOS 18. iOS 27 will be available for you iPhone 11 later this year. If there are any issues with iOS 26.1 after you install, it is likely Apple will already be working on a new update to fix any issues.
