You cannot officially "unmerge" two Apple Accounts or undo a synced data merge automatically, because Apple accounts themselves can never be merged in the first place. When data like contacts, photos, or notes combine on a device because of a shared login or a "merge" prompt, you must separate them manually.
Sign out of the incorrect account: Go to Settings, tap your name/Apple ID, scroll to the bottom, and tap Sign Out. Choose to keep local data on the device when prompted if you need to salvage parts of it, or choose delete/remove depending on whose data it is.
Log into the correct account: Sign in using the proper, individual Apple ID for that specific user.
Clean up unwanted data manually: Delete unwanted merged photos, contacts, or notes piece by piece directly on the device or via iCloud, as there is no single "undo" button.
