I have had my iPhone stolen while on holiday, I have a replacement iPhone arriving, can I use a eSIM to get back my number while I am on holiday

Before you drive yourself mad reading things online.
Your new iPhone is certainly capable of having it’s eSIM provisioned remotely.
That said, not every carrier has the technical ability to do so; and some might not do so “procedurally.” (As it’s obviously a direct means to perpetrate SIM-swap fraud)
So … be well-prepared when contacting your carrier.

Ask your phone carrier that is their feature not Apples.
If you do get your phone number back, beware of messages from "Apple Security", the "Police", etc. claiming that they have found your iPhone, or providing a "convenient" link for you to click on to locate it.
These messages are not from Apple or the authorities, but from the thieves and fences, who want to trick you into giving them your Apple Account credentials so they can remove Activation Lock from your phone and/or do other bad stuff like getting at your data in iCloud. Do not respond, click on any links, or provide requested information.
