How do I identify which number is being called on a dual eSIM iPhone when the phoning number is not in my contacts?

That’s actually the simplest situation. If the incoming number isn’t associated with any contact, your iPhone will simply display the phone number because there is no contact name available to show. Once you save that number to your Contacts, future calls from it will display the associated name instead.

I believe they are asking which of their own two numbers is being called.

For calls in your contact list, the recent call list only displays the contact name. To identify the number used by the caller, refer to the contact list.
