How do I disable "Writing Tools" in iOS 27? I've already added the Screen Time restriction to disallow "Writing Assistance", but the "insert slop" button still appears every time I select something in Notes or Mail. I don't want Apple or OpenAI or Anthropic to be slurping up the contents of every text field, and I don't want to be accidentally dumping AI-generated garbage into anything I write with a mis-tap, so I don't want to see this icon at all.
Answering my own question here: this was just a bug. I toggled "content & privacy restrictions" off, then back on again without changing any other settings, and the button disappeared as it was supposed to.

Paranoid, much? sberman gave you the right answer. Turn Siri off completely. Nothing you do on device is shared with Apple, OpenAI or Anthropic or anyone else for that matter. You're certainly welcome to cut off your nose to spite your face, if you want. Of corse, if you turn Siri off, CarPlay is a no go, so some things just will no longer work on your iPhone. But you'll be protected in your own little bubble, just fine.

Because Apple has made it beyond clear that AI on an iPhone is On-Device only. I don't believe any other cell manufacturer is even close to being as concerned about user privacy and data protection than Apple is. Please DON'T let the hype in the news cloud your views on this. Using AI on your iPhone means you'll be fully safe and no one other than you can see anything you do on it. Apple was the last to the AI party because protecting their users privacy and data is a central hallmark of all Apple does.

Did you actually read that article? Can I draw your attention to the "private cloud compute" section? Apple is clearly trying hard here but at the end of the day it is not using homomorphic encryption and the "privacy promise" that is supposedly "verified" by independent researchers still depends on apple actually running the stuff they claim to be running on the backend.
And are you aware that this doesn't cover the possibility of "extensions", either? If ChatGPT is ever enabled, then unknown portions of your data gets whisked off to ChatGPT at unknown times.
Settings > Siri > [scroll down to] Turn Off Siri should do it.

Nope. This breaks functionality that I rely on (like setting timers with voice) but does not remove these anti-features.
