Ancient Iphone 8S has been having issues with running apps in the last few months. Apps that I use on a regular basis, will no longer function. Purchased the phone new in 2018. It's running iOS 16.7.16 and says it is current. My theory is that the phone is old enough that it can no longer keep up with the apps. Any suggestions? I love my phone and don't want to buy a new one.

If you are referring to an iPhone 8 or 8 Plus, those phones ran iOS 11 when Apple first introduced them in September 2017, about nine years ago. You can update them to the latest release of iOS 16, but that's the end of the line. They cannot run iOS 17, 18, 26, or 27.
Some services can be reached via Web sites or via apps. E.g., there is a YouTube site and a YouTube app. The app now requires iOS 17.0 or later, which means that Google has abandoned support for your iPhone. But you might be able to watch stuff on YouTube by visiting the YouTube Web site using Safari. No guarantees that it will work and be convenient, but if it does work, it might let you get a bit more use out of that old phone.

Many apps will no longer work on an iPhone 8 at this point, especially, if they require a higher level iOS version. I understand you don't want to buy a new iPhone, but there's no magic wand we can wave over an 8 year old device to change that. Your phone is now considered Vintage and will soon be classified as Obsolete.
