When I try to Open in Preview an unsaved Pages document in the PDF menu of the Print dialog, Pages frequently crashes on macOS 27.0. No crash occurs when Saving the same document to PDF

You don't state what version of Pages you are using.
With a combination of text, image, PDF object, and equation in an unsaved Pages v15.3.1 document, I can select Print > PDF > Open in Preview without any issue.
You Export the Pages document to PDF, or Print > PDF > Save as PDF… though the first approach is typical.
Tested: Pages v15.3.1, macOS 27.0, M4 Mac Mini Pro
I did a clean install of MacOS 27 and now there are no issues.
