I'm working with Logic Pro and Mainstage. Can i set up loops to play in background and trigger them with my MIDI controller while i play keys and sing? What is the basic workflow?

You can do this in a similar fashion like you are triggering samples from a keyboard. The easy way is to assign midi notes to the pads/buttons or switches of your controller. This is usually done by a control software that came with your controller. Then you can use Sampler which is pretty straight forward or Logic's Live Loop Grid which may need a few more steps.
