Usually this happens because of insufficient storage, Wi-Fi/Internet issues, or a corrupted update file.
Try this order:
- Keep the Watch on its charger (50%+) and the iPhone connected to Wi-Fi.
- Restart both devices.
- On iPhone: Watch app -> General -> Storage and delete the downloaded update, then try again.
- If storage is low, remove some apps/music/photos from the Watch.
