Apple Support's article (link below) may be helpful:

Set paper size and orientation in Pages on Mac - Apple Support

Eg: says:

"Set a custom paper size"

  1. Select File > Page Set-up (from the File menu at the top of the screen).
  2. Click the Paper Size pop-up menu, then select Manage Custom Sizes.
  3. Click  to add your custom size.
  4. Click Untitled in the list above (it’s added when you click ), then type a name for your custom size.
  5. Type the width and height of the paper in the Width and Height fields.
  6. Make print margin settings, then click OK.
  7. If you need more information about custom print options, click the question mark button at the bottom of the print settings.
  8. Click OK to close the Page Setup window.

In the Document sidebar of Pages, the custom page size appears at the bottom of the paper size menu."

Don't seek help from AI when dealing with Pages. Start with this community first.

In the Pages templates chooser, there are envelopes found in the Stationery collection. Arbitrarily choosing the Classic Envelope shows in the Document panel that it is a #10 envelope and looks like this in Pages:

You don't need to change from Letter to #10 Envelope as it is done for you when you select this envelope template.

For printing an envelope, you should refer to your printer's documentation for the correct feed tray and configuration process to print a letter. I would not expect it to print correctly from the standard Letter tray.
