You weren't hacked. Hacking would be if the attackers exploited a hole in the system's security. Here, criminals sent you a "phishing" message, and when you fell for it, you compromised your own security. It's as though you were in a castle with a raised drawbridge, a moat filled with hungry alligators, and guards ready with boiling oil … and lowered the drawbridge just because a person in some attacking army said "we're not attackers; we're your friends." What happens after that is a catastrophe, but one that does not involve "hacking" the castle walls.

Once your phone is removed from your Apple Account, there is no way to reverse that remotely. There is a very narrow set of circumstances under which Activation Lock might turn itself back on if the thieves leave the phone unmolested for 30+ days, but realistically, that's not going to happen. Your phone is gone, you will never see the phone again, and you can't even "brick" it with Activation Lock. You can report the theft to your carrier, and ask them to blacklist the phone so that it will never receive cellular service from any carrier who honors the blacklist.

The bigger problem here is that by giving the thieves your Apple Account credentials, you have put your data and other things at risk. You should secure your Apple Account right away.

You should also consider the possibility that the thieves may have gone through your data in iCloud, and may be planning on using whatever they have learned to commit identity fraud against you, or to "phish" other people in your contacts.

Sorry, but you weren't hacked. You fell victim to a scam and once you did, there is no way to back out. You gave the thieves exactly what they needed to remove the phone from your account and Apple cannot reverse it.
