Did you check in Settings -> Your Name -> Apple Account -> iCloud -> iCloud+ Features -> Hide My Mail, if the company you have used to book your flight is listed? If yes, you can see to which email address the information has been forwarded.
You can see your used default Apple Pay email address in Settings -> Wallet & Apple Pay -> Apple Pay Defaults ->. Transaction Defaults - > Email
