Predictive text shows random characters on iPhone and iPad

Just wanting to know a few things about the APP Store and location predictive text.

1. If I had been using the American store to download apps. When the apps are updated, after realising my initial mistake. Do the apps revert to the UK version, or is it not really to big a problem
2. I seem to be getting alot of redirects to American websites, not much of a problem however, not following American Football or the Spurs Basketball Team (good match against the Nicks though 👍)
3. probably the most annoying aspect is that when typing on an iPhone or iPad, predictive text has been turned off, yet I'm still seeing random characters being shown after I have finished typing a word.
4. I strangely and somewhat embarrassing, if I shout (the neighbours think I'm crazy 😜) but it stops the random characters. I cant be doing this forever.
5. I had a Beta version of software on the iPhone, after speaking with knowledgeable people. I was told when the next public iOS version is released upload it.
6. Why does the Beta option still remain in settings ?

All in all though I have had quite a steep learning curve, regarding Apples products.

Overtime I am embarrassing and enjoying my iPad,

My iPhone 12 mini, well, Its still messed up. Im sure I clicked on a suspect link or even installed a dodgy app.

I thought I would test the Account associated with the iPhone by using an old Gmail address to login. This was accepted. I have got quite a few more questions, but they can wait.

ps the Genius store in the UK is more concerned about selling new upgrades, rather than supporting customers who expect a bit of Tech support.
