There is not a direct way to update the Carrier software on the Apple Watch. Instead, the Carrier software is handled through the iPhone.
On the iPhone, select
Settings > General > About
View the Carrier information
On that screen, if a carrier update is available it will be offered.
You should also have both the watch and iPhone updated to the latest version of their OS software. That means as of today, 27.0.1 for both of them.

By the way, on my watch Series 11 the carrier version is AT&T 42.0 and my iPhone carrier version is AT&T 72.1 ... they won't necessarily match.
Are your phone and watch working properly? I would leave them alone, carrier updates are not something one normally does manually.
