why has Tahoe stopped displaying WiFi conection symbol

It hasn't. You may have inadvertently removed it from the menu bar.
Right click or control+click on the menu bar, select Menu Bar Settings and make sure Wi-Fi is checked in the Menu Bar Controls section.
