iTunes was discontinued as an integrated and usable feature of the macOS generations ago. macOS 10.15 Catalina is when iTunes was discontinued (and from then on). So, what's the macOS? Using iTunes, this tells my you have an old Mac model.

Boot in Safe Mode:
As for the stalled update, try booting in Safe Mode (hold down the shift key upon boot).
