iPod touch compatibility with Mac M3 and music transfer

I'm looking at buying an iPod touch just for playing music - a limited number of songs for my workshop (in fact, I'd probably remove a bunch of the apps). What generation is compatible with a MAC M3 computer? Do I have to get a 7th gen for compatibility, or can I save some money and get a 5th gen? What issues will I have in transferring music?

I want the ease and intuitive-ness of an Apple product at a reasonable (low) price.
